My week 1 of my NEW52 foodie project went well. I made a recipe I found in this cookbook that I got for Christmas last year. It is a German cookbook called “Vegetarian Mediterranean cuisine”, just my kind of thing. Look at the garlic bulb!

The recipe is called “Vegetable gratin with Feta” and it was delicious, just not a big hit with the kids. They only looked at it and then asked for bread instead.

I have to say, that’s a recipe to my liking – not too fancy or complicated, plus it’s vegetarian too! Admittedly though I don’t like Feta cheese, but I guess that could easily be substituted.
Can’t wait for next week!! And who knows? There might be cake after all (in one of the many weeks to come).

Birgit, I am often cheating and use the feta made from cow milk instead of sheep. It’s like buying the mozzarella from cow instead of buffalo, but that buffalo stuff is just too strong. That cow milk feta does the trick for me. Maybe an alternative for you as well?
That was my concern exactly. I do like my cheeses to be mild, so sheep (or buffalo, yikes) aren’t for me at all.

As I looked at the ingredient list, I realize I have all of them right now. I’m going to give it a try. It looks like a great side dish for the ham I have on hand.

I would love this, but I’d say the rest of my family wouldn’t, unfortunately. They don’t care for feta at all. Maybe I could scale the recipe down, just for a treat for myself.
